I think the closest thing to a cross-platform note-taking app where you have control/ownership of your data, is Joplin (), the only downfall is you will need to pay to have cloud and web clipper services, which I can't personally vow for as I've never moved past the free version. They aren't as well suited to more complex notes / project documentation, though. There are great note taking apps like Joplin, Obsidian or Trilium Notes, the latter being my favorite of the three and sadly not widely known (yet). I'm looking to move from Microsoft's OneDrive / ToDo / OneNote.
I use a combination of Logseq with Syncthing and Joplin via WebDAV.
